A new microbrewery that brings out the appeal of Suzaka fruit through craft beer

The "Fuji" apple was born in Suzaka City, a region of high-quality fruit.ShinshuSuzaka Fruit Ale. We want to produce craft beer that is unique to Suzaka City! The government, JA, tourism association, local CATV, restaurants and others worked together to discuss and develop the information, and reflected the local voices gained through tasting events and other events.

The restaurant is brewed by Cruek Dining, which operates over 20 restaurants, mainly in the prefecture. Fukai Yoichi, the brewery director, has been a researcher at an agricultural-related institution in the prefecture for many years. This was the first time he tried making craft beer, and although he had a hard time bringing out the fruity feel, he had repeated trial and error in terms of the proportion of juice, how to add it, and timing, and finally, last August, he created a product that has a refreshing, fruity taste that is easy to drink even for people who don't like beer. The "unveiling party" held in Suzaka City in the same month was very popular among people in and outside the city.

Brewery

In the future, we will be offering grapes and peaches from Suzaka, as well as blackcurrants, which are effective in eliminating idle farmland, as well as blackcurrants.ShinshuCraft beer using the three apple brothers (Shiei, Shinano Sweet, Shinano Gold) is also planned to be developed. Furthermore, they will also be taking advantage of the ease of maneuvering of a microbrewery, which is about 150L in preparation at a time, and will also focus on brewing the custom-made recipe "Owner Ale." We will continue to keep an eye on craft beers that can only be made in Suzaka!

A brewery that has been renovated from the former Suzaka City Welfare Corporation Center, a facility in the city. Fukai studied brewing while he was a student, and after working on fermented foods (liquor, vinegar, cheese) in his previous job, he retired from his previous job with the desire to "make craft beer with high added value," and changed jobs to Cruke Dining.
